A bowl of pork and cabbage filling, a bowl of a mushroom and tofu one, and a tall stack of wrappers. You learn two folds, the simple half-moon and the pleated one that looks much harder than it is, and then you make dozens. Half get boiled and eaten in the room, half go home frozen flat on a tray.

This is the most sociable class on the menu, because folding is repetitive and people talk while their hands are busy. Children as young as five can fold badly and happily. Nothing here needs a skill you did not already have when you sat down.
